The light and fluffy pancakes are great for a weekend breakfast.
If you are planning to make pancakes, you’ll need to make sure you have these basic ingredients on hand:
- 1-1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1 pinch of salt
- 1 tsp sugar
- 2 large eggs, beaten
- 2 tbsp butter, melted and cooled
- 1-1/3 cups milk
- butter for frying
You need to mix all the ingredients together. The easiest way is to blend them, instead of mix them up by hands. If you don’t have a blender, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a pitcher.
When the batter is done, it’s better to leave it for 20 minutes before using it. Then, you can add more milk on the mixture.
You should cook the pancakes until the upper side of the pancake is blistering and bubbling. Then, it’s time to rotate the pancakes and cook the second side. Every side of the pancakes will take 1 minute approximately.
